Taking inspiration from Brittany in the North of France comes this cider composed of true cider varieties. Rich, textured, wild-fermented, intensely balanced. String Theory takes its name from both the contemporary physics model that explains supersymmetry and from the support of many traditional metaphysical worldviews including Biodynamics. It is also is a nod to musicianship and its relation to the origins of South Hill Cider, and to the string music that the cidermaker plays to the fermentations.
