
Imagine crossing a European Pilsner’s ingredients with the techniques and philosophies behind a New England IPA. We eased up on the bitterness here and increased the malt character while at the same time maxing out the noble hop aroma. We used Hallertau Mittelfruh, Saaz and Tettnanger like most hazies use Citra, Simcoe and Mosaic. In place of oats and wheat, we used raw, pearled barley with no husk and cereal mashed that before adding it to the mash.
