This sparkling cider includes Harrison, Newtown Pippin, Dabinett, Wickson Crabapple, and Ashmead's Kernel apples from CiderView Orchards. It starts with the juiciness of green apple, fresh grapes, starfruit, and then pulls you back into a strong tannic structure of black tea. Methode Ancestrale is the world's oldest method for sparkling production. The process is a deliberate and complex fermentation in which nothing is used but the apple. The fruit produces the sparkle, the aroma, and the flavor on its own. This bottle was aged 15 months sur lie and disgorged by hand.
