Breezeway Czech Farmhouse Ale

Introducing Breezeway - a Czech Farmhouse Ale brewed in collaboration with Four Winds Beach House. It's a 5.9% biere de soif. This one is a collaboration in the truest sense of the word, in a way that they haven't seen in BC since Driftwood an Hoyne famously ran hose between their breweries to blend a batch of Baltic Porter in 2014. It all started with a discussion about the beers they love, which led them to search for a common thread that connects the two breweries. Temporal has been doing a lot of farmhouse brewing lately, so they gravitated towards the idea of a clean saison. They also decided they wanted to exclusively use imported Czech ingredients - floor malted Pilsner & wheat malt from Tcheocomalt and Czech hops. They made an exception for German spelt malt due to a mutual love of the flavours it brings to this sort of beer. Beach House has a beautiful brew kit specifically designed for decoction mashing - something they can't do at Threefold. This process is used to create authentic Euro-style beers and also add complexity across other styles. So they were inspired to create something old-world and utilize this process, but the beer was to be brewed at Threefold. So... how could they utilize their specialized equipment? The answer is a bit mad. They decided to brew the same wort at both locations, but with two different mash processes. The Beach House portion would be cast out directly into a portable tank (and a few barrels) and brought back and blended to ferment with wort brewed at Threefold. A wild approach, considering the two breweries don't share a parking lot! The portion brewed at Threefold utilized a turbid mash - a type of step mash typically done to retain starches and dextrins in the wort. The Beach House portion featured a double decoction. Both were hopped in the kettle with Agnus and Saaz and then dryhopped with Saaz and Sladek. Crafted in Vancouver, BC
