Maris Otter malt makes up the bulk of this recipe to provide a rich, biscuit-like flavour to the brew. A delicate balance of Crystal and Chocolate Rye malts are used to achieve a beautiful red colour while adding flavour notes of caramel and chocolate. Fuggle and Willamette hops add mild spicy and earthy characteristics. Dark-roast American Oak chips are added to the end of the boil and allowed to stay in the beer during fermentation, creating a unique barrel-aged flavour – a technique you won’t find in most beers. They use a traditional Irish-Ale yeast strain to complement the malts and adds a nutty flavour to the beer. Lastly, they add Jamaican Dark Rum during conditioning to recreate the flavour of an Irish Red Ale aged in Caribbean Oak Rum Barrels, a unique spin on an Irish Red ale.
