Tox Mycelium Dream Pale Ale (Maitake, Lion's Mane)

For this special project, we teamed up with our friends from Seacoast Mushrooms in Mystic, CT. We crafted a fitting pale ale to be brewed with Gourmet Maitake and Lion's Mane Mushrooms. These are not your typical supermarket mushrooms though. They are somewhat rare, delicious, wildly unique, and are typically found only at specialty markets. Maitake, also known as hen of the woods, are rich, earthy, and woodsy in nature. Lion's Mane are delicate and mildly sweet. After careful consideration and experimentation, we paired them with Citra and Simcoe hops. With no credible science to confirm, some people believe that these mushrooms have special properties that enhance memory and brain function. Do they? All we know is that they are delicious.
