Our version of this traditional cider is Swedish in ingredients, Basque in style. Similar in character to orange wines, kombucha, or wild ales, and best enjoyed with good food and good company. Fresh-pressed juice from apples grown on the west coast of Sweden, spontaneously fermented, matured in oak for 12 months, and canned still. Minimal intervention and no additives. Dry, crisp, and tart with a decent acidity and a funky finish. Bright red, baked and overripe apple character, some earthy, barnyard notes, hints of stone fruit and a touch of minerality.
